Grilled Chicken and Penne with AwesomeSauce! PrincessD... - 1,138 views - 1 day ago
1 lb. boneless, skinless chicken breasts(seasoned with Salt & Pepper)
1 lb. penne pasta
2 tablespoons butter
2 tablespoons olive oil
2 or 3 cloves garlic, minced
½ cup chicken broth
1 (8-ounce) can tomato sauce
1 cup heavy cream
½ to 1 tsp salt & pepper (to taste)
1 tablespoon fresh parsley, chopped (I used dried)
6-8 fresh basil leaves, chiffonaded

Rinse chicken breasts in cold water. Layer between sheets of wax paper and pound to even thickness. Season both sides with Montreal Steak seasoning. Preheat grill for medium high heat, lightly oil grate, and grill chicken breasts on medium high heat for 6-8 mins each side. OR heat 2 tbsp butter & 2 tbsp olive oil in a large skillet over medium heat. Once the butter and olive oil is nice and hot, add chicken breasts and cook 5 mins each side. Set chicken aside to cool.

In a large pot, boil water with salt. Add 1lb penne pasta and boil according to package directions.
Heat 2 tablespoons butter and 2 tablespoons olive oil in the skillet over medium heat. Add the garlic and cook, stirring occasionally, until garlic is tender, but do not let the garlic burn!!! (about 3-5 mins). Add the chicken broth to the pan and allow to reduce by half.

Meanwhile, slice chicken.

Once the broth has reduced, stir in tomato sauce. Add the heavy cream and stir well to combine. Season with salt and pepper to taste. Turn heat to low. Chop the parsley and basil, add to sauce and mix well. Drain pasta and add to sauce. Stir well to coat. Serve pasta on plates, top with sliced chicken.

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
3 cups quick cooking oats
raisins, chocolate chips or nuts (optional)

1. In a medium bowl, cream together white sugar, butter, and brown sugar. Beat in eggs one at a time, then stir in vanilla.

2. Combine flour, cinnamon, baking soda,oats,and salt. Stir into the creamed mixture. If you are using nuts or raisins, mix into dough, combining well. Cover, and chill dough for at least one hour.

3. Preheat the oven to 375 degrees F (190 degrees C). Roll the dough into balls, and place 2 inches apart on cookie sheets.

2 tablespoon Olive Oil
1 Large Onion, chopped
1 Russet Potato, peeled and chopped into bite-size pieces
1 Quart Vegetable Stock
2 Heads of Broccoli, chopped
2 ounces Soft Goat Cheese, broken into pieces
Salt and Pepper

In a large pan, heat oil over medium-low heat and add onion.
Cook for about 5-7 minutes or until softened. Season with salt and pepper, add potato and toss to coat.
Add vegetable stock and raise heat to bring to a simmer. Turn heat to low, cover and let simmer for 15 minutes or until potato is tender.
Stir in broccoli pieces and bring back to a simmer for another 7 minutes. While still hot, transfer about 2/3 of the soup to a food processor or blender, add goat cheese, and blend until smooth. Stir back into the soup until well combined.
Season again with salt and lots of black pepper.

2 envelopes unflavored gelatin
1/2 cup cold coffee (or Kahlua)
3 cups hot coffee
1/2 cup Splenda or Sugar (or according to desired sweetness)
1 pinch salt

In a large bowl combine gelatin and cold coffee.

Allow to sit 10 minutes to soften.

Add hot coffee, sugar and salt; stir until the splenda/sugar is completely dissolved

Pour into glass baking dish or individual serving dishes and chill till set.

Serve with sweetened whipped cream!!
