Not everyone, particularly those who drive carefull, or possibly in the csae of bikes, not at all in the wet, practice & readiness for emergency stops is just unavailable.

Expert drivers can get away with many things that would kill ordinary drivers.

The rest of us need ABS & mandating their fitt...

Understand the temptation to fit a Chevy engine, but please go look for an suitable Jag engine. then you could rebuild the engine & perhaps mofify to improve performance.

Coopers have made great kits for over 40 years.

They are also a specialist & successful commercial scale brewery.

No surprise their English Bitter outshines "Old speckled hen", a beer I don't like either.

Yes we have all made that mistake at least once.

Join the club.

Unless you are very experienced it's best to determine the end point of fermentation by the use of a beer hydrometer.

You recipe modification seems to turn ordinary into very good.

Many may not know what LDM is (I don't after 40 years brewing).

In Australia (Coopers Home) there is a very limited supply of hops & they are not low cost.

I regularly make a Guinness stout clone & it tends to form a foamy head very readily.

Bottles when cold not too much of a problem, but from the keg with 5 psi CO2 I get more foam than I want.

I guess this type of stout needs careful control at evry step to get optimum ...
