Bottles when cold not too much of a problem, but from the keg with 5 psi CO2 I get more foam than I want.

There is no estimate of the probable accuracy of the described method but I'd guess its possibly +/-20%.
You have simply made a very poor video of the "fix" posted by Skype.
It does not work in many cases.
Probably the advice given by one commentator here is dwnld an earlier version & try that but be sure you disable auto updates.
