Norm Strim, founder of Nonna Pia's reductions begins the process with a three leaf, Consorzio aceto balsamico di Modena certified, six-year old Fattorie Giacobazzi balsamic vinegar. The vinegar is, by tradition, made using the white, sweet "Trebbiana" grapes from the rolling hills of the Province of Modena in the Emilia-Romagna region of Italy. The balsamic vinegar is lovingly slow cooked for 10-12 hours while being carefully infused with, when possible, locally sourced fruit and herbs along the way. Set in Whistler, Nonna Pia's enjoys the benefit of having nearby Pemberton as a source of inspiration for its blends. The result is a velvety thick and smooth, robust reduction made without the addition of any starches, gums or thickening agents, as found in most balsamic crèmes and glazes.
