You know that skum that boils to the top of the pot when ya cook a piece of meat? - That's bad stuff, That makes bad gravy. There ain't none of that here !
You know those little pieces of brown stuff that sticks to the bottom and sides of a pan when you fry or bake a piece of meat up just right? That's good stuff, That's where all the flavor is. It makes really good gravy. There a lot of that stuff here !
