If I don't know a person's gender, I tend to restructure my whole sentence so that gender-identification is unnecessary.
"Pat said they're going to the store" is trying to communicate that 1> Pat is going to the store, and 2> Pat told me so. "Pat informed me of intentions to go to the store." so...
