Why do the Sith all have pigmentation problems like Darth Vader? I get that living in a mechanical suit like he did would cause loss of pigmentation, however it looks like the animators did it just for effect here.

Nice wushu bro. As others have pointed out, I'm sure you also know the more practical forms with 'chucks too. Props on making the nunchucks yourself. I wish I had the proficiency in woodwork (and the tools!) to design and create my own chucks.
