It reminds me of the 70's and her glamorous cocktail parties. It's the perfect little bit to serve with a glass of chilled wine.

Olive Stuffed Cheese Puffs
5 oz (140 g) cheddar cheese, grated 1 cup (120 g) all purpose flour, plus 2 tsp if needed ½ tsp (2½ mL) salt ¼ cup (60 g) butter, chilled and cut into 1/4" (6 mm) pieces ice water 2 8-oz (230 g) jars of small green Manzanilla olives stuffed with pimentos (the Goya brand at your local Mexican market are great and inexpensive)
Preheat oven to 375°F (190°C).
Combine cheese, flour, salt and butter in a food processor and pulse, adding teaspoons of ice water until it forms a firm dough. Remove, form into a disc and chill until ready to use.
Flour a work surface and, with floured hands, roll olives in enough dough to cover. Pinch dough around the olive, then roll in between your hands until each ball is uniform. Place on a buttered sheet pan, spaced ½" (13 mm) apart. Bake for 10-15 minutes until golden.

Let's face it, if we gave our kids the option, they'd probably eat mac and cheese for every meal. We want to make our children happy, but not at the expense of feeding them unhealthy food, right? Well, with this mac and cheese, everyone can be happy. This recipe uses real ingredients like milk, peas, brown rice pasta and REAL cheese -- not the bright orange powder that comes in a packet. The best part it is it doesn't take much longer to prepare than the boxed varieties. Now that's what you call a win-win!

Mommy's Healthier Mac & Cheese
1lb (450 g) brown rice pasta (or any pasta you choose) 2 tbsp (30 g) butter 2 tbsp (15 g) flour 1¼-1½ cups (300--350 mL) low-fat milk ½ tsp (2.5mL) salt 1 cup (115 g) lite shredded cheddar cheese 1 cup (170 g) frozen peas
Cook pasta according to package
Melt butter in pan, add flour, whisking until a paste forms. Cook for 1 minute. Be careful not to burn.
Slowly add milk, whisking to incorporate. Add salt.
Add peas until cooked through about 1-2 mins.
Turn off heat and add cheese.
Drain pasta, add to cheese mixture. Freeze leftovers.
