yummmm! I make a similiar version if you're ever in a hurry. I cut my eggplant about a 1/2 inch thick and layer over the bottom of a greased pan, then layer spaghetti sauce and cheese over that. Bake 45 min at 450 and voila! A variation on that is "squash pizza," my favorite pizza alternative...
