Changed the way I eat. I never overcook eggs, they have a nicer taste, and the "sulfer" taste does not come out.

I've been to Home Restaurant on Market in San Francisco. It was fantastic, home-style food with a sophisticated twist. The meatloaf was to die for, with a side of cornbread. Their cornbread portion is huge, enough for two. I really recommend it.

I think it has to do with the eggs, he probably used xl or jumbo eggs, meaning more yolk and gelling action.

Crack is wack. I made it and mine came out perfect. Like Chef John said, the key is to undercook it and let it finish with the residual oven heat after you turn it off. Keeps cooking.

We eat something dead on similar to this in my family. We use white tortillas and it is fantastic. Our version includes tortillas, chorizo, eggs, and homemade farmers cheese.

We call it the butt.........Even with sliced supermarket bread, the butts are always left behind til' the end. And depending on if you are unlucky or real hungry, you will have to eat a butt sandwich.

It looks like he uses less water than he calls for, more like maybe 1/2 a cup. I am going to go by the video.

Has anyone tried the brine on cut turkey breasts? I was thinking of brining a 12 pound whole turkey along with 2 turkey breasts (which I will tie into a roast) in the same bucket, since white meat is what people really go for....any thoughts??????
