Question, If you used enough juice and sugar to raise the content to past 20% and that killed off the yeast before the sugar was totally consumed would you then have a naturaly stabilized sweet wine? It sounds logical to me to just add a lot of sugar from the start and the wine will stabilize itself and still be sweet but am I missing something?

Nice work, thanks!

I have made from kits for several years, but never was taught that trick about stirring out the CO2. I look forward to trying that to see what effect it has.
Looking forward now to #4.

Should I flake off the foam in a homemade wine or just keep stirring until my arm falls off?

To those who want to know which wine to make, here are some ideas:
All these wines are distributed through Winexpert. My personal favorite is an inexpensive Mezza Lunna White; My best sellers are the lightly fruit flavored Island Mist (similar to Arbor Mist, but way better); the one that ALWAYS wins a gold medal is the Estate Stags Leap Merlot(from Napa Valley California); there are many other delicious wines, but no common consensus among my customers because each palate is uniquely qualified to judge.
