Chef Klime Kovaceski began his culinary career with three years of
academic culinary training in his home town of Ohrid, Macedonia. He followed this schooling by becoming the
youngest graduate at a culinary college in the Croatian town of Opatija.
Klime next served as Executive Chef at The Skópje Hotel on Ohrid Lake, responsible for orchestrating 200-300 a la carte meals for breakfast, lunch, and dinner. At this point he was twenty-one years of age.
At age 24, Klime helmed the kitchen of a prestigious restaurant in Amsterdam. When the owner of that establishment decided to open a place in South Florida, Klime moved to the States to help. The restaurant, "Jama," debuted in Miami in early '85; Kovaceski, not nearly as fluent in English as he is today, was executive chef, and would remain so for the next ten years.
Jama's cuisine featured Eastern European specialties such as goulash,
stroganoff, and schnitzel. During his time there, Klime developed many
recipes he would later utilize at Crystal Cafe, his own restaurant that opened on Miami Beach in 1994. His signature cuisine at Crystal, "New Continental," encompassed a lean, contemporary take on Old World classics, as well as dishes that reflected the chef's more modern Miami sensibilities.
"I start with classic recipes and modify them to better serve the American public," says Kovaceski. "These changes aren't made for intellectual or cosmetic purposes, but reflect years of taking customer's tastes and comments into consideration." Since selling the Crystal Café, Klime has been an opening consultant for
many new restaurants around the country including:
