Karen Pendergrass is the Founder and CEO of Paleo Approved Inc., a certification company that provides a safe and reliable food-labeling system for all consumers. Paleo Approved enables consumers to be assured that foods who have earned the label are in concert with the Paleo Diet. Pendergrass conceived the idea of Paleo Approved in an effort to manage her own autoimmune disease, Celiac-Sprue. The biggest challenge she encountered was finding foods that were safe to treat her autoimmune condition. While attempting to find food that didn't exacerbate her condition, she discovered that the Organic-labeled "Grass-fed Beef" was not necessarily 100% grass-fed, and could be grain-finished. Pendergrass realized that the labels were misleading, and that a new labeling system that wasn't sullied by large agricultural companies needed to be in place to protect those who also had autoimmune conditions like her and help people easily identify Paleo foods. And thus the Paleo Approved concept was born. Karen Pendergrass is a passionate advocate of Paleo World Domination and is the creator of many social media groups such as the International Paleo Movement Group (IPGM), the Paleo Movement Fan Page, Whole Foods needs a Paleo Bar, Paleo for 2011, and Friends of Paleo Approved, amassing over 10,000 members of the Paleo Community. Pendergrass' life goal is to personally save 10 million lives before she kicks the bucket. Karen lives in Los Angeles, California.
