厚焼き卵は甘くて出汁少なめ焦げていてOKの関東風、出汁巻き卵はみりんと出汁で色の白いのが関西風というけれど、長澤家様のはどちらにちかいのかな。だし汁を後から入れるのは、新しい方法ではないでしょうか。スポンジ状に焼いて後から出汁をしみ込ませる。面白い発想です！
