I totally agree with you that this overly thick plain g-string sounds ugly. I tried the 21-56 EB set once myself and disliked the sound so much I ripped it off and restringed the guitar.
Dean Markley packages their sets with both plain and wound g string - the pure nickel "Jimi Hendrix" series can sound great on acoustic guitars. I started to use the 11-52 set years ago on my flattop.

Fingerpicking is the highlight of the guitar.
