Well for one don't say you own it, you own the gameplay footage, and your own opinions but you do not own the characters or the music. Youtube doesn't really have a problem with it since it's not covered in their list of copyrighted materials that you can't upload. Just don't try to include things outside of video games unless it is very short or used to make a point which is protected by the Fair Use Act. However some companies will not let you use their stuff for anything even if it is protected by fair use, for example Warner Music Group, or tv shows, movies, commercials, music, and music videos even if it is very short. With games it should be ok as long as you don't say you own something you don't own or if it spoils a new or unreleashed game.
