Having worked in the poultry business the term `organic` for these birds seems to be just a label. Granted the density levels are better which in some cases is the difference between an Organic and ordinary broiler. In the UK all birds have to be fed an organic diet right from chick stage onwards...

I guess it makes sense to have your own birds or if not practical buy from somewhere where you can see the conditions the birds live in.
