This is a recipe from the Post Punk Kitchen, an online vegan community. We love it a lot and want to spread the joy.
Vegan BLONDIES
6 oz. container of vegan soy yogurt (plain or vanilla) 1/4 cup + 2 tablespoons canola oil 1 cup sugar 1 tablespoon vanilla 2 tablespoons molasses 1 1/4 cups flour 3/4 teaspoon baking soda 1/2 teaspoon salt 2/3 cup chocolate chips
In small bowl, combine flour, baking soda, and salt.
In larger bowl, whisk together soy yogurt, oil, vanilla, and molasses. (Pour molasses into the measuring cup you use for the oil; pour until you're halfway to the 1/4 mark; the molasses will slide out easy.) Add sugar; whisk.
Add flour mixture to wet mixture; just before they're fully combined, fold in the chocolate chips.
Pour into greased 8" or 9" square pan and bake at 350 F for about 35 minutes. Let cool in pan on wire rack; they're even better a day or two after baking, when they've fully set. Makes 9 to 12 depending on how they're cut.
*Note: If you lack molasses, you can use 1 cup of brown sugar instead of the white sugar and molasses.

These are reminiscent of those jumbo chocolate muffins from Sams or Costco, except significantly less terrible for you.
Vegan DOUBLE CHOCOLATE MUFFINS
1 1/2 cups flour (we did part all-purpose, part whole-wheat) 3/4 cup sugar 6 tablespoons unsweetened cocoa powder 2 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons instant coffee powder 1 cup nondairy milk 1/2 cup canola oil (we did half oil, half applesauce to lower the fat) 4 tablespoons (1/4 cup) soy yogurt 1/2 cup chocolate chips
In medium bowl, whisk dry ingredients together. Sift if the cocoa powder is clumpy, or just mash the clumps out with a spoon.
In a smaller bowl or a large measuring cup, combine the wet ingredients. Add the wet to the dry, mixing gently, until almost combined. Fold in the chocolate chips.
Pour into greased muffin tin; you can make large, mushroom-topped muffins by making 8 or 9 muffins and filling up the cups to the very top.
Bake at 375 F for about 20 minutes. Let cool in pan for about 15 minutes, then finish cooling on wire rack.
Makes 8 to 12 muffins.

Vegan BLUEBERRY MUFFINS
2 cups flour (we did half all-purpose, half whole-wheat pastry flour) 1/2 cup sugar 1 teaspoon cinnamon 1/2 teaspoon salt 1 tablespoon baking powder 1 cup vegan milk (we used almond) 1 teaspoon apple cider vinegar 1 teaspoon vanilla 1/2 cup canola oil 3/4 cup blueberries, rinsed & dried 2 tablespoons raw turbinado sugar, for sprinkling (optional)
Preheat oven to 375 F. Spray muffin pan with nonstick spray or line it with cupcake liners.
In medium bowl, combine dry ingredients. In small bowl or in large measuring cup, whisk wet ingredients together. Add wet to dry, using a rubber spatula to stir as lightly as possible until everything is almost combined. Fold in the blueberries. If desired, sprinkle a little bit of raw turbinado sugar on top of each muffin.
Pour into muffin pan; each cup will be almost full. Bake at 375 F for 24-28 minutes, until a toothpick inserted comes out clean. Let cool in pan for 10 minutes, then finish cooling on wire rack. Makes 12.
