It looks sublime! What a ripoff that the nutrition establishment discourages consumption of this stuff...I never tasted marrow until late in middle age. I've been missing out and am eager to try this preparation method. Many thanks for posting.
The best thing about this technique is that the fire is started at the BOTTOM of the smoker. The small wad of newspaper gets a high flame quickly and the added fuel ignites easily. As fuel is added, the fuel becomes warm and glows red, keeping the smoke coming.
