A subscription is what people do to keep up with your new videos.
Let's say you Subscribe to me. The next time I upload a new video, you are informed and are most likley to watch it.
The reason everyone is so excited about subscribing is, the more subs (subscriptions) you earn, the more people are likley to watch it, which equals more view/comments/ratings to your video, which conludes you to becoming more popular, and then unto famous (hopefully).
So if you like the videos someone puts up, subscribe. Then the next time they upload a video, you'll be up-to-date and ready to watch!
Subscriptions on 'Youtube.com' are the same as Subscriptions in real life (Magazines, Newsletters, New Papers, Postcards, Promotional Packages, books, etc.)
