Altair closes the dead man's eyes as a sign of respect for the dead. It is supposed to allow the deceased to rest in darkness and peace. The eyes are supposed to be like windows that lead to the soul. or something like that, any way, if Altair left the eyes open, then the man's soul will never rest in peace and it might haunt Altair with a grudge I believe.
