@MaxamillionGat Probably just keep your distance and shoot him when he does the double circular swing or the left and right swings. He seems to take his time doing those attacks. Don't be too greedy, watch your stamina, and put your shield up when in doubt.

To be fair, I found it a little hard to hit the heads too even with a Halberd. The fact that you can't target the heads means you have to rely on your own aim. The heads always seem to appear closer than you think too.
