you can get apps from the market that will allow you to do full custom home screens you can pretty much change all of that, the way you view your apps, everything.. Check out ADW / Launcher Pro.. just youtube it

Why would you downgrade to the iphone 4? Android does so much more and you dont drop calls every few mins.. so much people left the iphone due to it being so limited app wise and just as a basic phone.. once you get your iphone 4 you will be selling that for another samsung Galaxy S.. lol
