I was just at the zarela channel and saw your question regarding the tamales in Mexico City and I have to say that zarela's recipe is very similar, also if you ever have a chance look into the recipe which is in the bag of "maseca para tamales" this one is a pretty good one also. I am also in Texas and in here I am able to fine fresh pork lard in the mexican meat markets you been in Austin I don't think would have a problem either. The maseca para tamales I have been lucky to find in my local heb, specialy during christmas time for about 6 dlls per 5 pound bag. This would give you about 220 tamales. The corn husks are also at heb. I hope this would help you. Let me know how it goes.
