Hey Andrew, for Old Man, I don't have a pattern but I can describe the basic beat.

It's essentially four downstrokes with one quick upstroke at the end as you change to the next chord. You're accenting the 3rd downstroke for the beat. Don't worry about open strings at first, just try and get the basic rhythm down. 1 - 2 - 3(A) - 4 - upstroke 1 - 2 - 3(A) - 4 - upstroke, etc. I often won't play chords when practicing a rhythm, I just dampen the strings and practice the beat.

When you get that down start throwing in the open strings, and use your strokes to play those specific notes.
