Now that you have bahamut, you should never be casting another summon or even elemental spell with Rydia as long as you have the MP to use him, high damage and non-elemental, he's pretty much the best you'll get in the way of offense and you'll need every ounce of the damage.

Sylph is great, it does a small amount of healing, but removes status effects and does a large amount of damage to your enemy, all at once.

@Torqegood They skipped it because of a bug, Maxwell most likely came back after the fact to show us what would happen during the course of normal gameplay.
