Ennio Morricone and John Williams are very good at composing music but Hans Zimmer has this unique mordern technics of making music which has never been heard before (its the reason why most of his composing songs are the "same"). Actually using the ears is pretty much the most needed tool in music if you are going to make music and after that comes the theory part.
