I kind of miss the old bourdain who was kind of an asshole and misfit, lol. But it's been fun watching him mature as a person throughout the years as he's travelled more and more of the world. It has definitely changed his perspective on life and what's important.

I love his style of cooking...very traditional Italian, minimal use of ingredients but high quality ingredients for an excellent rustic and simple dish.

He uses some pretty rare and expensive ingredients that are difficult to find anywhere that's not a major urban center. It looks delicious, but I doubt I'll be able to get that kind of stuff.

You only flip it once in order to seal in the juices and the flavor...if you're constantly flipping it, the meat will never get to a high temp and it will leak the juices out. And there's nothing wrong with marinades, it just depends on what kind of flavor profile you want. A spice rub will lea...

I'm pretty jealous of that Jango Fett costume.
