New Mexico True Breakfast Burrito Byway

In New Mexico almost no food, no meal is without the influence of the famous chile pepper. So it should be no surprise that New Mexico claims the invention of the Breakfast Burrito. It is the wrapped wonder that brings spice to the morning.
There is lore that the Breakfast Burrito first rose from the food vending stands at the Albuquerque International Balloon Fiesta in the early 1970s. There are restaurants such as Tia Sophia's in Santa Fe that claim creation of the Breakfast Burrito as early as 1974. And there's a strong chance that New Mexico homes, regularly equipped with chile, tortillas, and eggs, were making Breakfast Burritos for years before anyone thought to move them out of the kitchen.
It is now a staple on menus across the Southwest, and showing up frequently on menus nationwide. Even fast food chains now offer versions.
The humble but tasty Breakfast Burrito has officially "made it."
