ive cooked in restaurants for twenty years but only got serious about cooking in the last five your classes taught me the importance of a good foundation in cooking . my cooking has improved tenfold.most of my ideas and creativity are based on what you have taught. i cant thank you enough for bringing the passion of cooking back to me and im sure people who have tasted my dishes feel the same way. good to have you back. p.s. i would work with you for free for the opportunity to learn more lol.thanks for bringing real cooking to you tube. you really should have your own show on food network

Thanks for the corn chopping video, chef! The best part of the video is when you said how butter, salt and pepper would make it taste just like corn on the cob ...cept without the cob.... :) I went out and got some fresh corn ..... Thank you chef.

Lots of great "how to" video content here. Thanks, Chef!! I'm a 55 year old husband, father, grandfather, who is just now trying to learn ingredients and methods. Perhaps you could do some videos about what goes with what, and what DOESN'T go with what.......and perhaps a video or two about meal planning and timing, for two and for a large group (say 10 or more).

I stumbled onto your video for candied pecans on a blog called Fast Recipes and loved it. So of course I came here to YouTube to look you up. I was so excited to see Chicago as your hometown (because I live in the subs of Chitown) until I Googled your name and restaurant to find you are in Colorado...darn. Oh well, if I ever get to CO I will try to stop in for some goodness! Thanks for posting such helpful videos. I get SO annoyed at the fake happy heartiness of the Food Network cooks...you are such a breath of fresh air!
