it gets mor difficult, basic tec like u show, but u can also use your thumb to give force to his preassure point (about 2 cm from his chin in direction throat). that causes pain u hardly can resist (maby a veteran combatant can) and may prevent the opponent from biting.
at 1:15 u hit his backside...
