Venison is simple, marinate over night, season with salt and pepper, sear in a hot saute pan then finish in a 400 degree oven until desired internal temperature. I would suggest medium. All of the "chicken rub" does is dry it.

If you make the tacos again I would highly suggest blanching the tongue until the outer layer loosens, remove the membrane, then braise in a beef stock with dried peppers, cumin, etc. As a Chef cooking is my passion and some of my best memories come from cooking with my girlfriend....
