Just because they write songs that share some characteristics with metal doesn't mean the music itself is metal, people don't consider it metal for the same reason people don't consider Rubber Soul indian music just because it used a sitar.

Metalcore is essentially hardcore punk with heavy guitars, they just took some influences from metal but they aren't metal themselves.

Metal is a genre which came from a strong blues influence, right through the early hard rock bands, started by bands like Blue Cheer and taken forward by the likes of black Sabbath, you can see it's evolution through history, even in new symphonic and power bands you can still here those blues roots, the riffs, the style of singing, they all came from early heavy metal, metalcore comes from somewhere entirely different.

It's the result of people who listened to completely different music seeing metal bands and trying to take their image and sound and make it marketable, that's not necessarily a bad thing in itself, as taking influences from a variety of places can be good, but they've only taken part of it.
