@grippipo Water-soluble vitamins tend to be unstable- I have it on good authority that vitamin C, at least, oxidizes pretty fast. Still, it's not so rapid as to be instantaneously significant, so if you're drinking those blended fruits and vegetables within the hour, I think you should be good.
