Yes, I used to cook professionally. It's been some time since I last worked at a restaurant, but cooking is still a hobby of mine. And you're right, the diet is really tough to stick with if all you eat is bland and boring food. I'm glad to see that you enjoy my recipe videos :)
Concerning your question about witch cuts of beef you can eat while on Phase 2 - I haven't looked into specifically which cuts of beef are ok to use, but the easiest way to answer that is to only use cuts of beef that don't have any fat on them. Remember, you have to "remove all visible fat" on the approved meats before cooking them according to Dr. Simeons.
