Yes we had to prove you can go commercial and not chemically engineer the wine you make. So here we are - Ohio's first micro-winery, making wine the old way. We do stomp grape with our feet , though not as much as we used to, and add absolutely nothing to the wine. So, no stabilizers, no sulfites, no coloring, no glycerin, no filtration chemicals either. All we use is the sugar in the grape and the yeast in the skin.
