It was technically waxing gibbous on both days. The change in view of Mare Crisium is due to lunar libration with latitude changes due to orbital inclination and longitude changes due to orbital eccentricity. I don't see anything out of the ordinary.

Looks like a rocket staging at a very high altitude, probably over 50 km. You can tell it's very high up by how much the exhaust plume expands and by the fact that sunlight is illuminating it but it's night on the ground. Search Vandenberg Rocket Launch for a similar video.
