Nothing too amazing. As said, this technique has been around for a long time. However, just because it's been around a long time doesn't mean that it shouldn't be taught/re-introduced. I highly recommend layering newspaper under the box. This will help prevent weeds and wild grass from growing up...

why not just use a china cap lined with cheesecloth to collect the curd? seems like straining by hand is letting product escape. yeah, it's only a little bit, but still. cheesecloth ad strainer just seems easier and less mess.
