I'm not a fan of Gundam Seed either. Personally, I recommend Gundam: The 08th MS Team and Gundam Unicorn. Turn A Gundam is good too, if you don't mind the weird designs and the dated animation.

Outside of Gundam, I recommend Code Geass, Higurashi no naku koro ni and Fullmetal Alchemist...
