@jtstookz It all depends on the size of the humidor but most of the time, I would recommend to just use the crystals, that will make the maintenance much easier and it is more reliable than the green foam.

Yes, relative humidity is measured in % and it should be between 65 and 75 %. c or f means celcius vs Farenheit. So choose the unit you want to read the temperatures in.
