Økologisk Tjukkmjølk fra Røros har fått tildelt merket «Beskyttet geografisk betegnelse». I dette ligger det at den økologiske mjølka skal produseres lokalt, og at sjølve produksjonen, basert på tettekultur fra Røros-området, skal foregå i Røros kommune.
Mjølka som brukes er økologisk produsert på gårder i Nord-Østerdalen og Røros-traktene og videreforedles av Rørosmeieriet as.
Tjukkmjølk er en tradisjonell mjølkerett fra Røros-traktene som har mer enn 150 års historie. Den har lang holdbarhet og var en viktig del av kosten for gruve-arbeiderne på Røros, særlig om sommeren. Da kona tok med seg dyr og unger til setra, sørget hun for at det var mye tjukkmjølk på gården, slik at mannen hadde nok til hun vendte tilbake.
Navnet «tjukkmjølk» viser til den fyldige konsistensen på mjølka, som opprinnelig ble framstilt ved hjelp av tettegrasplanten. Blada fra planten ble skylt og lagt i ei lita treskål. Lunka nymjølk ble slått over, og mjølka ble satt på et lunt sted. Når mjølka ble stiv, var tetten klar til bruk. I dag tilsetter vi gamle tettekulturer fra Røros-traktene i mjølka.
Fordi fettpartiklene i mjølka ikke er finfordelt (mjølka er altså ikke homogenisert), ligger det et fløtelag på overflata. Dette kan du riste inn i mjølka. Fettprosent er 1,5 %.
Tjukkmjølka kan brukes rett fra kartongen, med flatbrød til, på frokostblanding eller med sukker og syltetøy. Du kan også riste den godt opp og nyte den som drikkemjølk.
