The problem is that you do too much.
Gaining muscle is about doing growth stimulating exercises and then eating a lot. You spend hours upon hours in the gym. That means you're spending your energy on doing instead of growing.

Lee's target was standing straight up, feet in line and offered no resistance. The guy didn't fly anywhere either, the chair was something like 20 cm behind him. Here the guy clearly resisted and you can still see the impact snapping him back.
