In this video, raw food chef and author Jennifer Cornbleet whips up a Mock Sour Cream and Chive Dip, a creamy, dairy-free version of the high-cholesterol original, taken from her book Raw Food Made Easy for 1 or 2 People.

A Mock Sour Cream and Chive Dip made with raw ingredients tastes very close to bottled Ranch dressing and is a wonderful way to introduce friends and families to the pleasures of raw food. In this demonstration video, Jennifer shows you how to make this flavorful favorite without the high-cholesterol mayonnaise or sour cream used in traditional recipes. The secret is cashews.

Jennifer begins by demonstrating how to soak nuts, a valuable raw food preparation technique. You'll discover how soaked nuts, in general, and cashews, in particular, can replace dairy in many raw recipes, including salad dressings, dips, and creamy frozen desserts.

Cashews are not low calorie and have a good amount of fat, but Jennifer shows how to reduce the fat content in your dip simply by soaking them.

Next you'll discover how to "mimic" the tartness of sour cream by adding just the right amount of citrus juice and which spices will give your dip a smoky, mellow flavor.

Then it's everybody into the blender, including chives or green onions, basil, and dill. Jennifer illustrates how the art of "pulsing" your blender will help you achieve a thick, dip-like consistency or a thinner texture that turns this recipe into a salad dressing.

Jennifer loves to entertain and she concludes her video with some interesting ideas for plating this dip with crudités and a chive garnish.
