I've got a similar van (square headlights though), a 78 G10 Shorty. I had the original 350 block stroked out to 385 cid (0.040 over on the block, fully blueprinted, full roller valvetrain). Yeah, I know it's not as stout as yours but it's a lot of fun (I have to be more mild due to California's draconian smog laws).
What amazes me about these vans is how well they hook. My engine makes 500 plus lb ft of torque run through a 700-R4 tranny (that low 3.06:1 first gear combined with 3.42 posi rear end gets it off the line pretty hard) and it just hooks and goes.
