Newest update! Her wound is healing so well already that they placed the Wound V.A.C. on her and she may possibly be home Friday. yey! Just an update. Mom had her surgery yesterday. She has very minimal pain. She will be non-weightbearing for a while. They are going to apply a Wound V.A.C. (google it, it's pretty cool), to her wound to make the healing go faster. When she is discharged, she will have to go in to the clinic 3x/week for it to be changed. She is doing well, as you can hear from the sound of it. Sorry about the sound, my stupid Logitech cam is really messing up...I forgot to turn off the "Right Sound" and it makes it sound funny. I hope you can understand it.
Thanks everyone who send her cards and gifts. She was tickled pink that she had two deliveries of mail yesterday :) They have kept her spirits up and have let her know that she is appreciated in this world. Thank you so much for that. I appreciate you all as well. Hope you enjoy some of the photos of the food done this past year ;)

Sancocho is a flavorful dish that is very popular in the caribbean Islands and latin america.
It is made with assorted root vegetables and chicken, beef or pork. I am making my sancocho with pork rib tips.

A super simple salad that is perfect for lunch or a light dinner.
Chipotle Chicken Salad
Dressing:
1/3 cup chopped fresh cilantro 2/3 cup light sour cream 1 Tablespoon minced chipotle chili, canned in adobo sauce 1 teaspoon ground cumin 1 teaspoon chili powder 4 teaspoons fresh lime juice ¼ teaspoon salt
Mix above ingredients together well and then set aside while you make the salad.
Salad:
4 cups romaine lettuce torn or shredded 2 cups chopped roasted skinless, boneless chicken breasts -- I used a rotisserie chicken from the deli at my grocery store 1 cup cherry or grape tomatoes, halved ½ cup diced avocado 1/3 cup thinly, vertically sliced red onion 1 (15-ounce) can black beans, drained and rinsed 1 (8-3/4 ounce) can whole kernel corn, drained and rinsed
Combine lettuce and remaining ingredients in a large bowl. Drizzle the dressing over the salad and toss gently to coat. Serve immediately.
You can make this spicier if you add a spoonful of the adobo sauce from the can. You may also substitute kidney or pinto beans for the black beans, if you prefer.

http://www.noreen... Greetings! Since I got a smokin' deal on breakfast sausage at my local grocery store when I purchased a "Meal Deal" for $5.99 for breakfast sausage, OJ, Biscuits and eggs, I thought I would give this a try.
I love to buy breakfast sausage from Schwans home service, but they recently closed their distribution center in my area and now if I want it, I have to order online and have it delivered to my house in a cooler, packed with dry ice. I don't want to pay the shipping, so I am trying to bake the sausage and then package it in sandwich bags to be heated up per serving.
This turned out very well and now I will be doing this on a regular basis. This will be great on busy mornings to go along with the pancakes I make and keep in the freezer. Heat them up together in the microwave and you have a quick wholesome breakfast that you have cooked yourself.
Give this a try! I know you will love it for its convenience.
