On its own, the channel patch trick won't make much difference to the overdrive level. Humbuckers will push the amp into overdrive more quickly than single coils, so you'll get more crunch with a Les Paul than with a Strat. The early Clapton Bluesbreakers stuff on a Les Paul is really the definit...
