6/8 has more of a 4/4 feel to it. LIke a shuffle.

3/4 has a distinct 3/4 feel to it. Like "Silent Night".

Count 6/8 as 1 la-lee 2 la-lee 3 la-lee 4 la-lee 1 la-lee, etc...

Count 3/4 as 1 and 2 and 3 and 1, etc...

You should be able to feel the difference if you count it out ...

You explain the difference as being that this version is good with humbuckers too, but then you immediately go one to demo it with single coils.

This is a great example of how Boss has lost touch. Why did your development team create a device that can only do 3/4 and 4/4? How about 7/4 and 5/4? So instead of giving us a more musical device you decide to add in a bunch of "loop FX" features that are more or less useless to most people.
