@binte1000 Our cheese salt contains no iodine. This is important because iodine kills lactic bacteria and lactic acid is important for aging.

@Lonepup1957 Thanks! You can use a cheese cloth but it will just take longer. Yes, it is actually a salt water solution that they keep the cheese in. You can do this but you don't have to. Yes, we have a recipe for feta. I don't think I can put a link in this comment. But just type feta in the search box on Austin Homebrew Supply's website.

Hi, this was a great video and I plan to buy the kit myself and give it a try. I noticed
2 things though - 1) draining out the cheese looked like a big mess - when it comes to
clean out that strainer. Wouldn't using a cheese cloth be more easy? Also with a cheese cloth,
you just twist it and the liquid comes out more easily. 2) I noticed that in the deli's that sell expensive
mozzarella, they are bagged in the liquid that you are throwing out. Would the cheese benefit if I bag it
with this liquid and let it age for a week in the fridge? Just curious - thank you!

Lastly, do you have a recipe for home made French feta cheese? I bought some fresh at a middle eastern
deli, and now the feta cheese at the super market tastes like cardboard. I can never eat feta cheese again
from a super market. I have since moved, and it would be a 65 - 70 mile drive to that deli. Thanks!
