I've dried both with the skin and without, and I find the skin is too hard to chew. I prefer removing the seeds, that's why using an apple pealer is great.

Them apples are a magnet for dust.

Like everything else...dust gets on furniture, curtains..everywhere, it's in the air. I would not want to eat food that is hanging out with no covering.
