Buffalo tartar anyone?

I am not sure if anybody agrees, but Bobby Flay's plating is primitive. It's like an episode from man vs food. I imagine that his food taste good. But, it's a bit overwheming to see it coming at you...unless you're supper hungry and don't much care about taste.
