Sounds to me like all these nasty comments come from bitter people who simply have sour grapes because they weren't allowed anywhere near a cathedral organ when they were that age! I hope their snobbish attitude hasn't put you off, and that you are still playing.

If you mean the gentleman with glasses who assists with the stops and turns a page during the Liszt, that man is Michel Goussu who is the curator of the organ, and I believe, choir director at St.Sulpice. I believe he an organist himself as well.
